Ingredients for making Stuffed Capsicum Rings:
Capsicum - 3
Potato - 2
Onion - 2
Tomato - 1
Grated paneer - 3 to 4 tablespoons
Chilli powder - 1tspn
Jeera (Cuminseed) powder - 1/2 tspn
Coriander powder - 1 tspn
Cheese slices or grated cheese
Method for making Stuffed Capsicum Rings:
Chop onion , tomato and 1 capsicum into fine pieces.
Heat oil in a kadai and fry onion and capsicum.
Saute for 2 minutes and add tomato and grated paneer .
Now add chilli powder , jeera(cumin) powder and coriander powder and saute for 2 minutes.
Keep this aside.
Grate potatoes and squeeze out the juice and add little salt.
Deseed and cut other 2 capsicums into thick rings.
In a flat bottomed kadai smear oil and place the rings and cook on both sides for a minute.
Now place the grated potato inside the rings.
This will form the base. Allow the potato to cook for 2 minutes.
Now stuff the capsicum ring with onion tomato paneer mixture.
Place cheese slices or grated cheese on top. Cover and cook till the cheese melts and remove from pan.
You can sprinkle chilli flakes or Italian herbs on top for extra flavour. Spicy stuffed capsium is ready to be served.
