Stuffed Capsicum Rings


This spicy, attractive crunchy capsicum rings with juicy vegetable stuffing inside will make you ask for more. This is a slight variation to the usual recipes as grated potato is used as a base..

Ingredients for making Stuffed Capsicum Rings:

Capsicum               -    3

Potato                    -    2

Onion                     -    2

Tomato                   -    1

Grated  paneer        -    3 to 4 tablespoons

Chilli powder           - 1tspn

Jeera (Cuminseed) powder          - 1/2 tspn

Coriander powder   - 1 tspn

Cheese slices or grated cheese

Method for making Stuffed Capsicum Rings:

  • Chop onion , tomato and 1 capsicum into fine pieces. 

  • Heat oil in a kadai and fry onion and capsicum. 

  • Saute for 2 minutes and add tomato and grated paneer . 

  • Now add chilli powder , jeera(cumin) powder and coriander powder and saute for 2 minutes. 

  • Keep this aside.

  • Grate potatoes and squeeze out the juice and add little salt.

  • Deseed and cut other 2 capsicums into thick rings. 

  • In a flat bottomed kadai smear oil and place the rings and cook on both sides for a minute. 

  • Now place the grated potato inside the rings. 

  • This will form the base. Allow the potato to cook for 2 minutes.

  • Now stuff the  capsicum ring with onion tomato paneer mixture.

  • Place cheese slices or grated cheese on top. Cover and cook till the cheese melts and remove from pan. 

  • You can sprinkle chilli flakes or Italian herbs on top for extra flavour. Spicy stuffed capsium  is ready to be served.
