Crunchy Plantain Stem Instant Pickle

This Plantain Stem Instant Pickle is the all time  favorite side dish for Sambar rice and Curd rice in our house. This fiber rich stem is a good source of Potassium and Vitamin B6. Actually it is the age old recipe which my mother in law learnt from her dad.

How to make Plantain Stem Instant Pickle:











Peel off the skin of the stem and cut them into thin rounds.

Then chop them to fine cubic pieces

Add required salt, red chilli powder.















Heat 2 tea spoons of oil in a sauteing pan and add mustard seeds and 1/2 tea spoon hing powder.

Pour it on the vegetable pieces and mix well.

Squeeze half of a lemon into it and serve.

Enjoy the healthy side dish with any rice.

(You can store it in refrigerator for 2 or 3 days)
