Khaja (Pastry Wafers)

Make this delicious Pastry wafer dipped in sugar syrup for Diwali! This crunchy fried sweet wafers tastes yummy with mild sweetness and very easy to make with simple procedure. Though I made this for the first time, it turned out very yummy without any flaw and we all loved it...

Ingredients for making Khaja:

  • Maida (All Purpose Flour)  250 gms
  • Sugar 250 gms
  • Ghee 3 tb spoons
  • Oil for deep frying
  • Salt a pinch
  • Baking soda a pinch
  • Green cardamom powder 1/4 tea spoon

How to make Khaja?

Take 2 tb spoons of the flour and add 1 and 1/2 tb spoon of ghee to it and mix well with a spoon and make a paste like stuff. Keep aside.
Add the remaining ghee to the remaining flour and add salt, baking soda to it and mix well with hand.
Add water little by little and knead to a tight dough. Keep aside.
Take a large lemon size balls of the dough and roll them to thin circles.
Take a tea spoon of the paste and spread it on the Circle (roti).
Roll it like a rope.
Lightly and gently give a press to it with the rolling pin.
Then cut it into 1 inch size pieces.
Add two cups of water to the sugar and make a thick syrup out of it. Add cardamom powder to it.
Heat oil in a pan and fry the khajas to golden brown.
Put the fried Khajas into the suagar syrup one by one and transfer them to a dry bowl.
The juicy, crispy and sweet wafers melt in your mouth now.
