Curry and Kootu Powder

Ingredients for making Curry and Gravy Powder:














Coriander seeds 2 cups
Chana dal (Kadalai Paruppu) 3/4 cup
Urad dal 1/2 cup
Red chillies 20
Pepper corns 1 tea spoon
Cumin seeds 1 tea spoon
Raw rice 3 tea spoons





How to make the Curry and Gravy Powder?


  • Heat a heavy bottomed pan and dry roast the above ingredients one by one to golden brown except cumin seeds.
  • Fry cumin seeds at the last for few seconds only.
  • After the stuff gets cold powder them in a mixer. It must be nutty. So dont make a fine powder. It must be like semolina/rawa/ sooji but not like granules.
  • Store them in a airtight box.



Tips to use the Curry Powder and Gravy Powder in cooking:


  • While doing vegetable stir fries like snake guard, eggplant, cluster beans or broad beans add 2 tb spoons of this powder after the veggies are boiled and saute them to get tasty stir fry.


  • For veggies like potatoes, raw banana, yam and other root vegetables add 1/2 tea spoon of garam masala powder with this powder and add to the roasted vegetable  to get spicy and nutty taste.


  • As another choice heat 2 tb spoons of oil in a pan and saute it with a tea spoon of saunf (Fennel seeds). After they splutter add finely chopped garlic, turmeric powder, salt and the vegetable and fry for some time. Fry the vegetable in low flame till it is cooked and finally add a table spoon of this powder and mix well,  


  • If you want to make Onion or Tomato chutney, chop required quantity of them and fry with 2 tea spoons of oil and salt for five minutes. After they cool down add two table spoons of this powder and grind to paste. Do the seasoning with mustard seeds and curry leaves. The instant chutney is ready.


  • Add a tea spoon of this powder and salt to fresh curd and mix well. Heat a tea spoon of oil and add mustard seeds, chopped green chillies and ginger. After they splutter add them to the curd. The instant tasty raitha is ready now to serve.


  • If your kids resist to eat green veggies that you make for lunch, don't worry. Just fry some chopped onions and chopped green vegetables in oil for two minutes and add a pinch of crushed cloves and cinnamon. Then add salt and a table spoon of this powder and mix well. Add a cup of boiled rice and mix well. The instant pulao is ready for lunch box.


When you run short of time to make vegetable Kootu for rice follow this:


  • Pressure cook the chopped veggies, 2 table spoons of  moong dal and 3 table spoons of this powder adding surplus water to soft with turmeric powder and salt.
  • After the pressure is released open the cooker and again switch on the stove after stirring the stuff well.
  • In no  time the stuff thickens. Add just a cup of ordinary milk or coconut milk and do the seasoning with mustard seeds and curry leaves. The tasty kootu is ready now. Can be done with pumpkin, ash gourd, chayote, drumstick and cabbage.
