This traditional recipe is a favourite tea time snack of our family. My mother in law is an expert in making varieties of Kozhukattais and this is a healthy option when compared to fried snacks...
Ingredients:
Raw rice - 1cup
Grated coconut - 1/4 cup
Green chilli - 2 to 3 nos.
Mustard seeds - 1 tspn
Asafoetida - a pinch
Sesame seed oil - 1 tbspn
(nallennai)
Curry leaves - few
Required salt
Method:
Soak raw rice for 3 to 4 hours. Grind it to a smooth thin batter. In a pan pour this batter. Add oil and required salt and keep stirring till it leaves the sides of the pan and rolls like a ball. Switch off. After it cools down knead the dough. Add grated coconut to this.In a pan heat 1 tspn oil and add mustard seeds. After it splutters add chopped green chillies, asafoetida , curry leaves and add this to the dough. Mix well. Grease your palm and make small balls. Place it in a idli plate and steam it for 10-12 minutes. Ammani kozhukattai is ready to be served.
Note:
You can even add idli podi to the dough and steam instead of green chillies.
Processed rice flour can be used instead of soaking and grinding raw rice. Add the flour to boiling water and mix well.
