Ingredients for making Yam Shallow fry:
Yam - 1/2 kg turmeric powder 1/4 tea spoon Red chilli powder 1 tea spoon Salt as Required Mustard seeds, Urad dhal for seasoning Besan flour 1 table spoon Corn flour 1 Table spoon Oil 5 table spoon Hing 1/2 tea spoons
Method for making Yam Shallow Fry:
Since Yam is a root vegetable its skin is coated with mud usually. So peel off the skin well and wipe the Yam with a clean kitchen towel. Don't wash it since it gives an itching sensation.After wiping it neatly cut the Yam into small cubes.
Heat the wok with oil. Add the seasoning items. After they get spluttered add the turmeric powder, chilli powder, hing and salt and mix well.
Then add the yam pieces, mix gently and cover the wok with a lid. Keep the stove in low flame. Once in ten minutes take off the lid and give a stir.
When you feel that the Yam is cooked well, no need for covering it with the lid. In medium flame roast it till it becomes crispy adding the flours mentioned in the ingredients.
Once the yam is cooked well, after taking off the lid, add the flours and allow them to get roasted in medium flame. Thanks for the reminder which i missed to add in the recipe...
