Ivy Gourd Shallow Fry (Kovakkai Curry)

Ivy gourd curry is a simple side dish with unique taste and colour which can be had both with rice and Chappathis. The Kovaikkai has a crunchy effect and the ripened ones should not be used since they give a sour taste. In this type I have marinated the veggies in spices to add zing to it....



Ingredients for making Ivy Gourd Fry (Kovakkai Fry):


Ivy Gourd   cut in to thin vertical pieces - 1 bowl

Chopped Ivy Gourds

Corn flour - 2 table spoons

Besan flour - 3 table spoons

Marinated Ivy Gourds

Red chilli powder - 1 tea spoon

Turmeric powder  - 1/4 tea spoon

Coriander seed powder - 1 table spoon

Garam masal powder - 1/4 tea spoon (Optional)

Salt to taste

Chopped curry leaves


 

 

Method of making Ivygourd Fry (Kovakkai Fry):

 

Since this vegetable takes a long time to get cooked pressure cook the vegetable and take it out. Place it in a broad vessel. Add all tems given under the Ingredients to it and mix well. Let it marinate for 50 minutes. Then heat a pan with 4 table spoons of oil. Add the marinated Ivy gourd and fry it keeping the stove in medium flame for atleast 15 minutes. Stir the vegetable once in 3 or 4 minutes.
