Aviyal kuzhambu (Mixed Vegetable Buttermilk Kuzhambu)

Aviyal is the popular mixed vegetable kootu of Tamilnadu, which is the most prefered side dish for traditional variety rice items like Tamarind rice, Lemon rice etc.,  This is the Kuzhambu version of the same kootu. When we have small quantity of different vegetable leftovers in the refrigerator, we make this Kuzhambu at home. Since it has more vegetables no need for making separate side dish. This can be mixed with hot rice and had with Pappads or Chips.

Ingredients for Aviyal Kuzhambu:


Mixed vegetables like Ash gourd, Carrot, Brinjal, Drumstick, Chayote (Chow chow), Snake gourd cut in to thin long pieces of 1 1/2 inch each

Coconut 3 table spoons

Green chillies and red chillies 3 each

Raw rice 2 tea spoons

Cumin seeds 1 1/2 tea spoon

Thick Beaten curd 1 cup

Curry leaves 

Coconut oil 2 tea spoons


How to make Aviyal Kuzhambu:


In a broad pan boil all the vegetables together with enough water adding salt and turmeric powder. 

While the veggies are boiling grind the coconut, cumin seeds, chillies and raw rice with water to paste and mix the paste with curd and keep aside.

Once the vegetables are cooked add the curd and coconut paste to the vegetables and mix well. Add a bunch of curry leaves and when the gravy is about to boil and starts giving bubbles switch off the stove.

Add the fresh coconut oil and mix well.
