Soaked in warm water, deskinned and sliced almonds 2 tb spoons
Charoli seeds (Sara paruppu) 2 tb spoons
Cardamom powder 1/2 tea spoon
Saffrong strings dissolved in warm milk of 2 tb spoons 2 strings
How to make Basundi?
Take milk in a heavy bottomed vessel with a good height and heat in medium flame. Stir the milk then and there. You need patience to make this Basundi.
Keep boiling the milk atleast for 45 minutes stirring inbetween. When you are near the stove keep it at full flame and stir. When the milk comes up keep the flame at low.
When the milk starts forming layers around it will keep sticking to the sides of vessels. With the help of the ladle remove them and put inside the boiling milk.
When the milk thickens it tends to change the colour from white to creamy yellow colour automatically and comes to the consistency of Milkmaid (Condensed milk) add the sugar and keep stirring for 5 minutes.
Now add the nuts and flavoring agents.
The creamy and nutty Basundi ready tastes heavenly when served chill.
