White Vegetable Kurma

Ingredients for making White vegetable Kurma:


Chopped Carrot, Beans, Potato, cauliflower  and Turnip - 1 bowl (boiled)

Chopped onions 1 cup

Slitted Green chillies 2

Green peas if available 3 table spoons

Ginger garlic paste 2 tea spoons

For paste: Grind 3 table spoons of coconut, 1/2 tea spoon of fennel seeds, 1 Green chilli and 5 cashews into fine paste with little water.

Crushed Cloves,Cinnamon and a cardamom pod

Oil 4 table spoons

 


Method for making White vegetable Kurma:


Heat the wok with 4 table spoons of oil. 

Saute it with cloves, cinnamon and a cardamom pod. 

Fry Onions till they become transparent and add ginger garlic paste and give a stir.

Now add green chillies and peas and fry for 2 minutes. 

Add salt and the boiled vegetables. Mix them well and let them boil with some water for 2 minutes.

Now add the coconut paste. Add required water for the gravy. 

When everything mixes well and thickens garnish with coriander leaves.
