Cool Cucumber with Moongh dal Kootu

Ingredients for making Cucumber Kootu:


 

 

 

 

 

 

 

 

Cucumbers 4

Moongh dal 4 tb spoons

Coconut 4 tb spoons

Cumin seeds 1 tea spoon

Raw rice 1 tea spoon

Green chillies 2

Red chilli 1

Mustard seeds and urad dal for seasoning

Curry leaves

Coconut oil 2 tea spoons



How to make Cucumber Kootu?

 

Peel the skin of the cucumber and cut them to small dices

Grind the coconut, raw rice, cumin seeds and the chillies to paste with water and keep aside.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Heat a broad pan or kadai.

Dry roast the moong dal till nice aroma comes. Add 5 cups of water to it.

When the dal is half cooked add the cucumber pieces and 1/2 tea spoon of turmeric powder.

 

 

 

 

 

 

 

 

 

   

Allow them to boil till the veggies become soft. Add necessary salt.

Now add the ground coconut paste to it and stir well.

Add curry leaves.

 

 

 

 

 

 

 

 

 

Switch off the stove and saute it with mustard seeds and urad dal in coconut oil.
