Stuffed Kuzhipaniyaram

A classic recipe from the cuisine of chetinadu is Kuzhipaniyaram. It becomes more stomach filling, nutritious, interesting  and tasty when done with vegetable stuffing.



How to make Kuzhi Paniyaram Batter?


Raw rice 1 cup

Parboiled rice 1 cup

Urad dal 3 tb spoons

Fenugreek seeds 1 tea spoon


Wash all the ingredients well and sok together for 3 to 4 hours. Then grind to smooth batter adding salt and water. Allow it to ferment for 8 to 10 hours. Then refrigerate it. Whenever you want to make kuzhipaniyarams, take this batter and make it.



Note:


Kuzhi paniyaram batter can also be done by adding 4 bread slices or a cup of washed poha with soaked rice while grinding to give extra punch.



How to make Stuffed Kuzhi Paniyarams:


Make any mixed vegetable curry with your favorite vegetables like the one we make for Cutlet or Masal Dosa or Aloo Methi Curry.

 

 

 

 

 

 

 

 

 

Grease the Kuzhipaniyaram pan with oil. Fill all the holes with a tb spoon of batter.

Place a tb spoon of vegetables on it.


 

 

 

 

 

 

 

 

Again pour another 2 tb spoons of batter on them to cover the vegetables.

Close the pan with a lid and allow it to get cooked for 3 to 5 minutes in medium flame.

 

 

 

 

 

 

 

 

 

Then remove the lid and flip it off to the next side. After the other side is also cooked take them out and serve with chutney.
