Milagu Thattai (Pepper Thattai)

I learnt this recipe from my mother in law who makes this often especially during winter and rainy seasons. This crispy and nutty snack with pepper corns, cumin seeds, curry leaves and sesame seeds tastes extremely good. Moreover the procedure for making this is very simple and easy...

Ingredients for making Milagu Thattai:


  • Par boiled rice (Idli rice)   250 gms
  • Roasted Urad dal powder 2 tb spoons
  • Pepper corns 2 tea spoons
  • Cumin seeds 2 tea spoons
  • Curry leaves
  • White sesame seeds 2 tea spoons
  • Red chillies 2
  • Salt 3/4 tea spoon
  • Hing powder 1/4 tea spoon
  • Coconut oil 3 tea spoons
  • Oil for frying

How to make Pepper Milagu Thattai?

STEP 1

  • Dry roast urad dal in a pan till it becomes golden brown.
  • Powder it very finely and  sieve it well and keep aside the fine powder. 
  • This can be done in advance and stored in refrigerator for even a month in an air tight box.

STEP 2

  • Soak the rice after washing in water for 4 hours.
  • Drain the water and grind it with very less water to fine smooth paste in a wet grinder or mixie with salt.
  • Be cautious in adding water. Add little by little and grind. The batter should be thicker than the idli batter.

STEP 3

  • In the mixie jar powder the pepper, cumin seeds, red chillies and curry leaves coarsely.
  • Now add the urad dal powder, hing powder, powdered stuff and sesame seeds to batter and mix well with hand.
  • It should be in the roti dough consistency.
  • Heat 3 tea spoons of coconut oil in a sautéing pan till the smoke starts coming and add to the batter and mix well. This gives nice aroma to the snack.
  • Heat oil in a frying pan.
  • Grease a plastic sheet well and make small rounds taking gooseberry size batter and placing it on the plastic sheet.
  • Deep fry them in oil till becomes golden colour and store in air tight box after getting cooled down.

NOTE:
After adding Urad dal powder, if you feel the batter is still not tight enough, add 2 tb spoons of roasted gram powder.
While making the rounds, you can make big circle, and with the help of a small bottle lid you can cut into even shapes of rounds from the bigger ones.
