Keerai Thoran (Dry Spinach Recipe)

Ingredients for making Keerai Thoran (Dry Spinach Recipe):


Spinach / Mulai keerai / Ponnankanni keerai / manathakkali keerai 1 large bunch
Moongh dal 3 tb spoons
Salt to taste
Hing / Asafoetida powder 1/4 tea spoon
Turmeric powder 1/4 tea spoon
Sugar a pinch
Coconut oil 2 tea spoons
Mustard seeds and Urad dal for seasoning



For grinding:


Coconut 3 tb spoons
Cumin seeds 1/2 tea spoons
Red chillies 3
Grind the above three ingredients to coarse without adding water and keep aside.





















How to make Keerai Thoran (Dry Spinach Recipe)?


Remove the bottom stems and wash the leaves well rinsing in water.
Chop them finely and keep aside.

















Boil the moongh dal in a pan with 2 cups of water.
Wait till the dals are half cooked and water becomes less to just 1/4 cup.

















Add the chopped greens to the pan and add the turmeric powder, salt, asafoetida and sugar and stir gently.
The greens will get cooked well in 5 to 8 minutes.

















Once the stuff becomes dry add the coconut mix and mix well.
Heat a sauteing pan and do the seasoning with mustard seeds and urad dal and transfer it to the pan with the spinach. Mix well and serve.
