Ingredients for making Veg Rava Idli:
Sooji / rava / Semolina 2 cups
Curd blended well 200 ml
Salt to taste
Mustard seeds, chana dal, broken cashews for seasoning
Ghee 2 tea spoons
Cooking soda or eno fruit salt 1/4 tea spoon
For stuffing:
Well boiled and mashed potatoes 2
Grated carrot 1
Chopped capsicum and tomatoes 2 table spoons each
Red chilli powder 1/4 tea spoon or chopped green chillies 1 tea spoon
Grated ginger 1/4 tea spoon
Coriander leaves
Salt to taste
Oil 3 tea spoons
Turmeric powder 1/4 tea spoon
How to make Veg Rava Idli?
In a pan dry roast rava till the colour starts changing. Immediately transfer it to a broad bowl.
Do the seasoning with the items given in ghee and add to the bowl.
Once it gets cooled down add the curd, salt and some water.
Bring it to pouring consistency.
Keep it aside for 30 minutes.
Heat a pan with oil.
Fry the tomatoes, ginger and green chillies till the tomatoes become mushy.
Add the turmeric powder, carrot, salt and stir for two minutes.
Now mash the potatoes well and add to the pan and mix well.
Add the coriander leaves.
Take gooseberry size balls and press them keeping on the palm.
Add 1/4 tea spoon of cooking soda or eno fruit salt to the batter just before making the idlis and mix well.
Grease the idli plates.
Fill the craters with the batter to half level. Place the pressed veg stuff on the batter.
Pour some more batter on the veg stuff and cover them.
Steam them in the idli cooker or steamer for 15 minutes.
Serve hot with chutney.
