Ingredients for making Masala Pudalangai (Spicy Snake-gourd Fry):
- Snake gourds 3
- Chana dal 3 table spoons
- Finely chopped onions and tomatoes 1/2 cup each
- Roughly chopped garlic 4 (Optional)
- Mustard seeds 1 tea spoon
- Urad dal 2 tea spoons
- Fennel seeds / Saunf 1 tea spoon
- Turmeric powder 1/4 tea spoon
- Red chilli powder 1 tea spoon
- Coriander seed powder 2 tea spoons
- Cumin seed powder 1/4 tea spoon
- Slitted green chillies 2
- Curry leaves few
- Oil 3 table spoons
- Salt to taste
How to make Masala Pudalangai (Spicy Snake-gourd Fry)?
Soak chana dal for 30 minutes and pressure cook to soft but with out mushy and keep aside.
Wash the vegetable, cut it in to half vertically and remove the inside stuff.
Cut in to thin pieces.
Heat a pan with oil.
Do the seasoning with mustard, saunf, urad dal, green chillies and curry leaves.
Add turmeric powder to the oil.
Fry the onions with little salt till it becomes soft.
Add the tomatoes and fry.
Put the required extra salt, and all powders.
Stir till the tomatoes become mushy.
Add the chopped snake gourd pieces and mix well.
Pour 1 cup of water and close the pan with a lid.
After 10 minutes remove the lid.
Once the veggies are cooked well and start frying add the boiled chana dal to it and stir for a while.
Garnish with coriander leaves.
