The sun dried cluster beans when fried in oil serves as the wonderful combo for sambar rice and curd rice. We also used to have it as the accompaniment to porridges like Kambang koozh and Ragi Koozhu..
Ingredients for making Seeni avaraikkai /Kothavarangai Vaththal (Sundried Cluster Beans) :
- Cluster beans / Seeni avaraikkai 1 kg
- Sour curd 200 ml
- Salt 2 table spoons
- Asafoetida powder 1 tea spoon
- Turmeric powder 1/2 tea spoon
- Red chilli powder 1 tea spoon
How to make Seeni avaraikkai /Kothavarangai Vaththal (Sundried Cluster Beans)?
Remove the sharp stem of the cluster beans and wash them well.
In a big vessel boil surplus amount of water adding salt and turmeric powder.
Once it boils well add the cluster beans and immerse them well in water and switch off the stove.
Let them stay in hot boiled water for just five minutes.
Transfer them to a strainer and remove all excess water.
Place the veggies in a broad bowl and allow them to cool down.
Add the asafoetida powder, curd, red chilli powder to them and mix well with hands.
Once they marinate well spread them on a clean plastic sheet or a white cloth under the sun.
If there is any curd left over keep it aside.
In the evening again put the partially dried veggies with the curd and marinate well.
Next day again sun dry them and repeat it for four or five days till the veggies become dry without tiny moisture.
Store them in a clean jar and whenever needed deep fry in oil and use.
