Thavalai Adai

Thavalai Adai is an authentic Tamil Brahmin Cuisine made in different styles by the natives of Thanjavur and Tirunelveli. My sister's mother in law makes this Thavalai Adai extra ordinarily tasty and whenever my son visits them from hostel during holidays, after tasting her Thavalai Adai he used to insist me to get the recipe from her and do that. This time when I went to Chennai, She was so kind enough to make the Thavalai Adai for me. I made Thavalai Adai  after returning home town and it came out very well like hers. The crispy Thavalai Adai with the crushed pepper, cumin and fried coconut pieces takes you to heaven with the combined aroma of coconut oil, gingelly oil and ghee...

Ingredients for making Thavalai Adai:

  • Raw rice 6 cups
  • Thr dal 1 cup
  • Chana dal / Bengal gram 1 cup
  • Urad dal 1 cup
  • Red chillies 5 or 6
  • Sour Butter Milk 500 ml
  • Finely chopped coconut pieces 3 tb spoons
  • Crushed Pepper and Cumin 2 tb spoons
  • Curry leaves hand ful
  • Asafoetida Powder 1/2 tspn
  • Salt to taste
  • Mix Gingelly oil, Ghee and Coconut oil of 3 tb spoons each


How to make Thavalai Adai?

In a mixer powder the raw rice to a coarse stuff.
Let the texture be like that of semolina / rawa / sooji.
Add the buttermilk to the raw rice powder, mix well and keep aside.
When you add butter milk, let it be a thick batter.
Now wash the dals together add red chillies and soak for two hours.

Add some salt and grind to a paste.
Let it be slightly coarse and not very smooth.

By this time the soaked rice powder in buttermilk would have become very thick and tight.
Add the dal stuff to the soaked rice powder and mix well.

Bring the batter to a thick stuff by adding little water.
Heat a kadai with some ghee and add the coconut pieces, pepper cumin powder, asafoetida, curry leaves and fry for a minute.
Add the roasted stuff to the Thavalai Adai Batter.

Heat a heavy bottomed iron cast pan.
Grease with the combined oil by pouring 3 tea spoons.
 Pour 2 ladles of adai batter.
No need to spread much.
Again drizzle with some oil and close with a lid.
Let it get cooked in medium flame for atleast 6 to 7 minutes.
Flip off and cook well both sides till becomes crispy.
Serve hot.
Just one Thavalai Adai makes our tummy full and to the maximum can have two!!!
