Blackgram rice with Sesame chutney and Lady’s finger Gravy ( உளுத்தம் பருப்புசாதம், எள்ளு துவையல் & வெண்டைக்காய் பச்சடி)



This is a very famous combo meals of Tirunelveli natives which provides a balanced diet and served hot usually on special family occasions and get togethers….




I BLACKGRAM RICE:

Ingredients:
Rice 4 cups
Splitted black gram 1 cup
Fenugreek ½ tea spoon
Garlic pearls 10
Grated coconut 2 tb spoons
Karupatti a small piece (Optional)

Method:
Heat a pan and fry the black gram without oil for few minutes till the colour changes slightly. Add the fenugreek mix well and add it to the rice. Wash the rice and gram together and add 13 cups of water (as we add for the regular rice). Add the rest of the ingredients to it and pressure cook it as usual with required salt.

II SESAME CHUTNEY:
Fry 3 table spoons of sesame in a pan without oil till it splutters and keep aside.
Fry 4 red chillies in  a tea spoon of oil.
Now  grind the redchillies with a cup of fresh grated coconut, little tamarind and salt. Finally add the roasted sesames and grind well with little water. Now the chutney is ready.

III LADY’S FINGER GRAVY:

Ingredients:
Lady’s finger ¼ k.g
Green chillies 3
Red chilli powder 1/2tea spoon
Tomatoes 3
Onion 1
Tamarind juice ¼ cup (Raw mango pieces could be added instead of tamarind water)
For grinding
2 tb spoon of coconut, 3 shallots and a tea spoon of cumin seeds.

Method:
Split the Lady’s finger into two vertically and then finely chop them. Chop the onions , tomatoes and green chillies too. Heat 1 tb spoon of oil in a kadai. Add mustard seeds and blackgram. Then add the onions, green chillies, tomatoes and fry well. Then add the lady’s finger pieces and salt and fry for 5 minutes in medium flame. Add the tamrind water and required water for boiling the vegetables. When the lady’s finger is boiled well add the coconut paste and curry leaves and switch off the stove in 2 minutes.

Add gingelly oil to the blackgram rice and mix the chutney with it. Have with pappad and lady’s finger. The same rice could also be had with curd.
