We call this as Keerai Thuvaran. Any type of greens like Spinach, Palak, Amaranth leaves can be used to make this curry. It is very healthy side dish since it is rich in iron. Moong dhal combined with the Greens gives a wonderful taste as side dish to any south Indian meal.
In mixer jar add coconut, cumin seed and red chillies and grind it coarsely and keep aside.
Take a pan and dry roast the moong dhal till nice aroma comes and add 3 cups of water.
When it is half boiled (it takes around 10 minutes) add the chopped Greens to the pan.Before adding chopped greens see to it that there is less water (Just a handful) in the pan. If the water is more the greens will become soggy.
After adding the greens add turmeric powder, salt and allow it to cook for 10 minutes. When the water completely evaporates and the dhal and greens become separated, add the coconut mix and stir.
In a sauteing pan in 2 teaspoons of oil add mustard seeds, uradh dhal and hing and add to the pan that has greens. Mix well and serve.
