Yellow Pumpkin Stir Fry

 

Usually we make Kootu or Sambhar out of Yellow Pumpkin and also sometimes a Rich Yellow Pumpkin Raitha. Many kids don't like any stuff made out of yellow pumpkin. But it has very good health and nutritious benefits. It is packed with Carotenoids and rich in antioxidant. Make yellow pumpkin curry with spices just as we do the Potato stir fry and make the kids to love it and gain its health benefits...


Ingredients for making Yellow Pumpkin Stir Fry:

Fresh Yellow pumpkin chopped in to small cubes 1 large bowl

Turmeric powder,

Red chilli powder 1 tea spoon

Chopped Onions 1 small cup

Hing 1/4 tea spoon

Corn flour 1 table spoon

Cumin seed 1 tea spoon

Garam masala Powder 1/4 tea spoon (Optional)

Mustard seeds and Urad dhal

Oil 1 1/2 table spoons



Method for making Yellow Pumpkin Stir Fry:

 

Heat a pan with oil. Saute it with mustard seeds, uradh dhal and cumin seeds. Add salt, chilli powder, turmeric powder and hing(or Garam masala powder)  to the oil and stir it. Fry the onions for few minutes and add the chopped pumpkin pieces and mix well. 

 

 

 

Keep the flame in medium and occasionally stir it. After the veggies are boiled, keep the flame in high and fry till the moisture evaporates fully. Sprinkle the corn flour and mix well. Garnish with curry leaves and serve.




Note: While cooking the yellow pumpkin don't close the pan with the lid. It gives out more water if cooked closed and this will make the curry more watery.
