Coconut Rice / Thengai Sadham is the popular and traditional rice variety of Tamil Nadu. A very quick recipe that could make lunch sumptuous with Pappad and any vegetable stir fry.

Ingredients for making Coconut Rice /Thengai Sadham
- Boiled Rice 4 cups
- Fresh shredded coconut 1 cup
- Chopped green chillies 3
- Broken red chillies 2
- Roasted Peanuts 2 table spoons
- Urad dal 4 table spoons
- Mustard seeds 1/2 tea spoon
- Asafoetida Powder 1/4 tea spoon
- Required Salt
- Sugar 1/4 tea spoon
- Curry leaves
- Coconut oil 3 table spoons
- Ghee 1/2 teaspoon
How to make Coconut Rice /Thengai Sadham?
Boil rice and keep aside on a broad bowl.
Soak Urad dal in water for 15 minutes, rinse the water and filter it, keep aside.
Heat a pan with coconut oil.
Do the seasoning with Mustard seeds, Urad dal, Red chillies, Green chillies and Curry leaves.
Keep frying till the dal becomes golden brown.
Now add the peanuts too.
Add the coconut and stir in low flame for 2 minutes.
Add required salt, Asafoetida powder and mix well.
Add 1/2 teaspoon ghee to the rice and transfer the roasted stuff to the rice bowl.
The traditional coconut rice is ready to serve now.
