Indian Fried Rice (Restaurant Style)

The most popular and loved Rice Recipe is this Veg Fried Rice. Simply mind blowing, aromatic rice that tastes delicious with rich and spicy Indian gravies. The chinese fried rice and Indo chinese fried rice look light golden brown in colour due to the addition of soya sauce and the Indian Fried rice looks milky white and tempting....

Cooking time: 15 to 20 mins
Serves: 4 to 6


Ingredients for making Restaurant Style Indian Fried Rice:


Basmathi rice 250 gms or 2 full cups
Water 3 1/2 cups
Butter 2 tb spoons
Oil 1 tb spoon
Cloves 4
Cinnamon stick small pieces 5 or 6
Bay leaves 2
White pepper powder 1 1/2 tea spoon
Slitted green chillies 2
Cumin seeds 1/2 tea spoon
Finely chopped garlic pods 2 tea spoons
Green peas 2 tb spoons
Chopped Spring onions 2 tb spoons
Onions thinly chopped from 2 onions
Fresh green vegetables chopped 1 bowl (Beans, carrot, cabbage, capsicum)
Salt to taste





How to make Restaurant Style Indian Fried Rice?


Step 1


Wash basmathi rice just once and rinse off the water. Keep the drained rice for 10 minutes.
Heat a broad pan with 1 tb spoon of butter. Once it melts add the soaked rice into it without water and fry for few seconds in low flame gently.
Pour 3 1/2 cups water into it. add 1/4 tea spoon salt.
Give a stir and cover it with a lid.














Let it cook in low flame for 15 to 20 minutes.
In between open the lid and give a gentle stir without breaking the rice two times.
Transfer the boiled rice to a broad plate or bowl and keep aside.




Step 2


Now Heat the pan with balance butter and oil.
Add Bay leaves & cumin seeds and after they splutter fry the onions adding some salt.
Once they become dull fry the chopped garlic pods.
Now add the spices and pepper powder and stir.
Add 1 tb spoon of spring onions, green chillies and saute well.
Add all other vegetables and fry in medium flame for few minutes without adding water.
When the vegetables are half cooked check out for salt.
If needed add more.

















Now add the boiled basmathi rice to it and mix the rice with vegetables and spices well without breaking the rice.
Wait till the rice mixes well with them.
Garnish with the balance spring onions.
Roasted cashews can be added for richness.
Serve with any spicy gravy like kadai paneer, kadai vegetables, Manchurians, Baby corn masala, Gobi masala  or Koftas.


Note: After frying the vegetables toss it with a tea spoon of white vinegar and then add the boiled rice and mix well .

    While I admire (and follow) your recipes of variegated cuisines, somehow I am not happy with the search feature provided by your site. I wanted to look for Indo-Chinese fried rice and what you have to say/opine about it, but could get nowhere!!!! Maybe I need to use my own imagination and verve to find out the best combo thereof...

    Please work with your system administrator (if there is one) or someone technical to search FIRST WITHIN your own preparations than simply banking on Lord Google for everything!

    Aah! let me put on my chef's cap and see what I can do :-)
