Ingredients for making Spicy Kovaikkai / Tindora / Ivy Gourd Fry:
Kovaikkai 500 gms
Salt to taste
Oil 3tb spoons
Cumin seeds 1 tea spoon
Red chilli Powder 2 tea spoons
Roasted Besan / Gram flour 3 tb spoons
Coriander seed powder 2 tea spoons
Garlic pods 5 (crushed)
Curry leaves
How to make Spicy Kovaikkai / Tindora / Ivy Gourd Fry:
Wash the veggies well and slit them in to four thin vertical pieces.
Pressure cook them to one whistle with salt and turmeric powder.
Heat a pan with oil and do the seasoning with cumin seeds. Once they splutter add the curry leaves and the crushed garlic.
stir for a while and add the red chilli powder, coriander powder and mix well.
Put the boiled veggies in to the pan and stir.
Let them get fried with the spices for ten to fifteen minutes in medium flame.
Stir them occasionally.
Finally add the dry roasted Gram flour and mix well.
Switch off the stove after 3 minutes.
