Snake Gourd Curry (Pudalangai Curry)

Snake gourd has a unique flavour and when it is fresh and tender tastes very well.  I make this stir fry using besan flour and Cumin seeds. This Snake gourd curry made from thin rings  looks very attractive and makes kids to eat it fondly. It is a perfect side dish for any rice....

Ingredients:


Fresh tender Snake Gourd -  3

Oil - 2 table spoons

Cumin seeds / Jeeragam - 1/2 tea spoon

Mustard seeds & Urad dal 1 tea spoon each

Coriander seed powder - 2 tea spoons

Red chilli powder - 1 tea spoon

Besan flour / Kadalai Maavu - 2 table spoons

Salt to taste

Turmeric powder - 1/4 tea spoon



 

How to make Snake Gourd Curry?

 

Wash and wipe the vegetable neatly. Cut them into thin rings. 

Heat a shallow heavy bottomed pan. 

Heat 2 table spoons of oil in it. 

Add the mustard and cumin seeds and  urad dal.

After they splutter add salt, turmeric powder, coriander seed powder and red chilli powder and fry. Add few curry leaves.

Now add the veggies and mix gently. Keep the stove in medium flame and close the pan with the lid for 10 minutes.

Then remove the lid and give a gentle stir. Don't close the pan after that since by that time the veggie would have boiled well. 

Till the veggie becomes dry, fry it in medium flame. 

Sprinkle the Besan flour and fry.  Garnish with curry leaves and serve.
