I made a trial of making this Adai with broken wheat, Foxtail millet and Some lentils. I was so happy that it turned out very  tasty with fantastic texture and one more new healthy recipe to serve my diabetic mother in law..

  • Pre time: 20 mins
  • Cooking time: 20 mins
  • Serves: 4

Ingredients for making Gothumai Thinai Adai / Broken Wheat and Foxtail millet Spicy Dosa:

  • Broken wheat / Wheat Rawa  2 cups
  • Thinai / Foxtail millet 1 cup
  • Rice 1/2 cup
  • Black gram / Urad dal 1/2 cup ( I used the one with skin)
  • Thur dal 1/4 cup
  • Chana dal 1/4 cup
  • Red chillies 6
  • Salt to taste
  • Hing / Asafoetida powder 1/2 tea spoon
  • Curry leaves
  • Oil for making Adai

How to make Gothumai Thinai Adai / Broken Wheat and Foxtail millet Spicy Dosa?

Add all the lentils and grains mentioned above together, wash twice and soak in water with red chillies for four hours.

After four hours grind remove the excess water and grind them to soft but not fine batter adding required salt. Let the batter be soft and mildly coarse.
Allow it to set aside for 4 hours.
Add some chopped curry leaves and asafoetida powder.

Finely chopped onions could also be added.
Heat the dosa tawa and grease it with oil.
Pour a ladle of batter on the tawa and spread it like dosa.
Make a small hole in the centre with the spatula and pour half tea spoon of oil in the centre and around the adai.
Once the corners start to turn out golden brown flip it to the other side and cook it for one more minute.

Now the hot, spicy and crispy adai is ready to serve with chutney or sambar or avial.
If you want it to be soft and not crispy make the adai thicker ones with more batter.
