Ingredients for making Bitter gourd Fry:
- Bitter gourds 250 gms
- Besan flour 2 tb spoons
- Rice flour 1 tb spoons
- Corn flour 1 tb spoons
- Salt to taste
- Turmeric powder 1/4 tea spoon
- Red chilli powder 1 and 1/2 tea spoons
- Garlic ginger paste 1 tea spoon (Optional)
- Thick tamarind juice extracted from a gooseberry size tamarind 75 ml
- Oil for frying
Method for making Bitter gourd fry:
Wash the vegetable and chop them to thin rounds.Place them in a broad bowl or pan and add all the above mentioned items to them except oil.
Mix them well with hand and see to it that the spices and flours mix with tamarind juice and forms a paste coating on the veg pieces.
Let them to marinate for 20 minutes.
Heat oil in a pan and fry them in lots to golden brown.

ReplyDeleteMy mother-in-law makes this recipe same way as you make. We need to celebrate the bitterness of this vegetable and not try to kill it by deep frying and make it lose other nutrients along with it. This vegetable is good for many ailments as all of us know. I cut this vegetable into small pieces and make it with uppu, kaaram, some jaggery, corriander powder, in gingely oil and like this more than lady's finger curry. This is my take on this vegetable. I don't want to post this in fb. I keep following all your recipes... :)
What you said is right. We also at home do the other method of making this with Jaggery with coconut. When my son was very small I used to fry this and I familiarised this vegetable.. Slowly he started liking the other version of boiling and sauteing.. Thanks for sharing your views...
Deletehi there, i just saw this recipe. Indeed bittergourds arent kids favorite and i would love to try this recipe subhashni. But can i also have the coconut jaggery version? Is it the same as what deepa mentioned? She mentioned a few words i dunno of like uppu, kaaram, gingely oil..? Pls help?:)
