Ingredients for making Green Pulao:
Mint leaves 1 cup
Coriander leaves 1 cup
Basmathi Rice 2 cups
Finely chopped Garlic heads 1 table spoon
Chopped onions 1/2 cup
Green chillies 3
Cummin seeds 1/2 tea spoon
Cinnamon and cloves for seasoning
Bay leaf 2
Garam masala powder 1/2 tea spoon
Oil 2 table spoons and Ghee 1 table spoon
Method for making Green Pulao:
Was the basmathi rice and drain the water and keep aside.
Heat a heavy bottomed pan with oil. Add cummin seeds and bay leaves. Add the cinnamon and cloves crushed. Then fry chopped onions and garlic.
Keep the stove in medium and while the onion is frying grind the greenleaves and green chillies to paste and to the pan and fry well. Add a tea spoon of sugar.
Now add the basmathi rice and salt. Pour 4 cups of water. (Can substitute with coconut milk)Keep the stove in a low flame and close the pan with a lid. After 15 minutes open it and mix gently. The pulao is ready.
Note: Avoid making the paste in advance since it will lose the green colour when exposed to oxygen.
