Poricha Kootu (Vegetables and Lentils gravy with Roasted Spices)

Poricha Kootu is slightly different from the regular kootu we make. It is made with freshly ground spices. It tatses great as side dish to have with hot rice and Vatha Kuzhambu. Here is the recipe of the simple and comfort side dish....

Ingredients for making Poricha Kootu:


Any one vegetable or Mixed Vegetables can be used.

Here I used Cucumber, Chow chow and Snake gourd.

Vegetables cut into small squares  1 big bowl

Red chillies 4

Urad dal  3 tea spoons

Pepper corns 1 tea spoon

Cumin seed 2 tea spoons

Coconut 3 tb spoons

Thur dal from 100 gms of dal


How to make Poricha Kootu?


In a pan or pressure pan half cook the thur dal with water and turmeric powder.

 

 

 

 

 

 

 

 

 

 

 

 

Then add the chopped vegetables and some more water with required salt.

When the vegetable gets boiled,

Heat a sauteing pan with 2 tea spoons of oil. Fry the urad dal, chillies and peppercorn till the dal colour changes to brown.

 

 

 

 

 

 

 

 

 

 

 

 

Transfer it to the mixie jar and add the cumin seeds and coconut to it.

Grind it to paste with water and keep aside.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Once the vegetables become well boiled and soft add the ground paste to it and mix well.

Saute it with mustard seeds and curry leaves.
