Ingredients for making Aval Puliyodharai (Poha Pulihora/Puliyogare):
Poha/Aval/Beaten Rice/Rice flakes 1 large bowl (250gms) Tamarind juice taken from a lemon size tamarind 500ml Gingelly oil 3 tb spoons Red chillies 6 Groundnuts/Peanuts 2 tb spoons Mustard seeds Urad dal 2 tea spoons Chana dal/Bengal gram 2 tea spoons Hing powder 1/4 tea spoon Fenugreek 1 tea spoon Sesame seeds 2 tea spoons Curry leaves Turmeric powder 1/4 tea spoon Salt to taste
How to make Aval Puliyodharai (Poha Pulihora/Puliyogare)?
Dry roast the fenu greeks to golden brown and sesame seeds till they splutter separately, powder them and keep aside. Wash the Poha, drain the water out and pour the tamarind juice on it adding salt and turmeric powder Let them to get soaked for 15 to 20 mins. After 15 mins you can see the Poha absorbing all the tamarind water well. Now heat a pan with oil. Add mustard seeds, urad dal, chana dal, peanuts and red chillies Once they splutter and dals become roasted add the curry leaves and hing powder.
Transfer the soaked Poha to the pan and stir well Keep the flame low and allow the stuff to get blended well with the spices. Sprinkle the powdered fenugreek, sesame seeds and give a stir. Now the flavoured and aromatic, tangy Poha Pulihora is ready to serve.
