Yellow Pumpkin Fiber Chutney

A chutney made from the leftover seeds and fiber of yellow pumpkin. This tastes delicious and can be had with hot rice and also as a side dish for Rotis, Idlis and Dosas. It is also a good combo for curd rice. A chutney with of more vegetable stuff and less coconut...


Ingredients to make Yellow Pumpkin Fiber Chutney:


Scoop away the fibrous part from fresh yellow pumpkin and store it in a dry airtight box and freeze it. You can make use of it whenever needed













Pumkin Fiber  2 cups

Grated fresh coconut 2 table spoon

Tamarind - 1 gooseberry size

Red chillies 5

Urad dhal 3 table spoons

Hing - 1/2 tea spoon


Method for making the Yellow Pumpkin Fiber Chutney:


Heat a wok with a table spoon of oil and fry red chillies and Urad dhal to golden colour.  Take them out and allow it to cool. Meanwhile with another table spoon of oil fry the pumpkin fiber in medium flame atleast for 15  minutes till it becomes softer. Then add the fried vegetable, chillies, dhal, Tamarind, Hing, Salt and coconut together and grind to paste. Saute it with mustard seeds in a teaspoon of oil. The best out of waste is ready to eat.
