This white pumpkin gravy made with lentils is a typical South Indian side dish and gravy made often. It is a healthy recipe which can be had as a side dish for rice or had by mixing with hot rice. This type of kootu since made with roasted spices, coconut and lentils it gives a fine aroma and hence a mouth watering one. We make this in large quantity and use it along with rice for lunch and as side dish for Chapathis for dinner....
Ingredients:
Ash gourd pieces cut into small cubes - 1 bowl
Moong dhal and Thuvar dhal 4 table spoons each boiled with 4 cups of water in a pressure cooker softly.
Tamarind juice taken from a half sized lemon.
Fry the following in One table spoon of oil :
Corainder seeds 2 table spoons
Chana dhal 1 table spoon
Red chillies 3
Pepper 1/2 tea spoon
Raw rice 1 tea spoon and
Fenugreek 1/4 tea spoon to golden brown.
Add these to 3 table spoons of fresh grated coconut and grind to fine paste with water and keep aside.
Method:
Boil the vegetable with salt and turmeric powder. When it is cooked 3/4th add the tamarind juice. After the raw smell goes and the veggies are boiled well add the boiled lentils with water and mix well. Then add the ground paste.Do the seasoning with mustard seeds, cumin seeds, curry leaves and hing.
