An easy to make, healthy and tasty breakfast is Little millet Pongal. This little millet is very rich in fiber and phosphorous and can be substituted for rice. Why can't we start our day healthy by having this Healthy & Light Breakfast?

Ingredients for making Little millet Pongal:
Samai arisi (Little Millet) 1 cup
Moong dal 1/2 cup
Water 6 cups
Salt to taste
For tempering
Crushed Pepper 2 tea spoons
Cumin seed 1 tea spoon
Finely chopped ginger 1 tea spoon
Curry leaves
Cashews
Ghee (Clarified butter) 3 tea spoons
(More ghee could be added if you are making this breakfast for kids)
How to make Samai Pongal?
Take a broad pan. Dry roast the moong dal for a minute and add 2 cups of water.
When the moong dal is half cooked, wash the millet well and drai the water.
Add it to the pan with 4 cups of water. Add necessary salt and mix well.
Close the pan with a lid and keep the flame low.
After 10 minutes remove the lid and stir well.
Check the cooked level of the millet. If you feel it has to be cooked further, add some more water and stir well.
When the water is fully absorbed and the millet is cooked switch off the stove.
In a sauteing pan heat the ghee and add the tempering items. Add the garnishing items to the pongal and serve hot with chutney of Brinjal Gothsu.
