Stir Fried and Spiced Beetroot

Though we all know very well about the goodness of beetroot,  we give less preference to cook it. Try this method of beetroot stir fry that will definitely makes you to start loving this wonderful vegetable...

Ingredients for making Stir Fried and Spiced Beetroot:

Grated beetroot  from 2 beetroots

Finely chopped green chillies 3

Shallots 4

Coconut pieces or grated 2 tb spoons

Ginger an inch piece

Cumin seeds 1/2 tea spoon

Curry leaves

Coriander seed powder 1/2 tea spoon

Red chilli powder 1/4 tea spoon

Mustard seeds and urad dal for sauteing

Oil 3 tea spoons  

Salt to taste

How to make Stir Fried and Spice Beetroot?

Add coconut, ginger, shallots and cumin seed together and give two turns in the mixie without adding water. Keep it aside.

Heat a pan with oil and saute it with mustard seeds, urad dal, and after they splutter add chopped green chillies  and curry leaves.

Then add the salt, corainder seed powder and red chilli powder to it and mix well.











Now add the grated beetroot and stir well.

Keep the flame in medium.

Let the beetroot get cooked for five minutes.










Then add the ground coconut ginger mix and stir well.

The aromatic, spiced up curry is ready to serve now..
