Maaladu (Roasted Gram Ladoo)

Maaladu is the  delicious and simplest sweet from Tamilnadu and this is a must sweet item on all important occasions . The soft texture of this sweet melts in mouth with the mesmerizing aroma of ghee and Cardamom. Since it is very easy to make and rich in protein we make this to give kids as evening snack too...

Yields: 20 to 25 ladoos

Ingredients for making Maaladu (Roasted Gram Ladoo):

Roasted Gram (Pottu kadalai) 4 cups
Sugar   3 and 1/2 cups
Ghee 2 cups (Clarified butter)
Cardamom pods 4
Roughly chopped cashews, almonds, pistachios  2 tb spoons

How to make Maaladu (Roasted Gram Ladoo) ?

In a mixie jar add roasted gram, sugar and cardamom pods together and powder them to smooth powder.
Transfer the powdered stuff to a broad pan or bowl.

Heat a tb spoon of ghee and fry the nuts to golden brown and add to the powdered stuff.
Now heat the remaining ghee till it just starts to give out smoke. (Don't wait to get more or high smoke)
Switch off the stove and pour the ghee on the powdered stuff and stir it with a ladle.
Grease your palm with ghee and make small lemon size balls out of it.
Store them in air tight boxes or refrigerate them.
