Roasted Vermicelli 300 gms (2 cups) Chopped onions from 1 onion Chopped veggies like capsicum,cabbage, carrot, beans, potato, cauliflower etc., 1 cup Garam masala powder 1/4 tea spoon Cumin seeds 1/2 tea spoon Red chilli powder 1 tea spoon Coriander powder 1 tea spoon Turmeric powder 1/4 tea spoon Cashews 5 to 7 Oil 2 tb spoons Ghee 1 tea spoon Cloves and Cinnamon crushed coarsely 1/2 tea spoon Coriander leaves and mint leaves handful
For masala paste:
Garlic heads 5 Onions 2 tb spoons chopped Ginger an inch piece Green chillies 2 Tomato 1 Saunf (Fennel seeds) 1/2 tea spoon Grind the above items together to paste and keep aside.
How to make Spicy Vermicelli Briyani?
Heat a broad heavy bottomed pan with oil and ghee. Saute it with cumin seeds. Add clove and cinnamon and fry for few seconds. Then fry the onions adding a pinch of salt for a minute. Then add all other chopped vegetables and fry in medium flame for two more minutes. Now add all the powders mentioned under Ingredients column and stir well. Add the grounded paste and chopped leaves and mix well.
Now add the roasted vermicelli and stir well. Pour 4 cups of water and required salt. Mix well. Close the pan with a lid and keep the flame to minimum or low. Let it to cook for 12 to 15 minutes. Switch off the stove. Open the lid after 5 minutes. Garnish with roasted cashews if you like. Now the spicy Vermicelli Briyani is ready to serve with curd or raitha.
