Besan and Milk Burfi

Ingredients for making Besan and Milk Burfi:

  • Besan Flour 1 cup (200 gms)
  • Khoya  100 gms (Un sweetened)
  • Milk 200 ml
  • Sugar 2 cups
  • Ghee 1 cup
  • Finely chopped nuts like almonds, cashews and pistachios 2 tb spoons and cardamom powder 1/2 tea spoon.

How to make Besan and milk Burfi?

Make the khoya to granules by just powdering them with hand roughly and keep aside.
Heat a heavy bottomed pan or cooker pan and roast the besan flour with 2 tb spoons of ghee till it becomes slightly brown in medium flame. 
When it starts to change the colour add the khoya to it and mix well. The khoya stars melting and mixes with besan flour and will start forming paste like consistency.
At this stage add the milk and sugar and keep stirring.
Don't bother if the lumps form. They will get disappeared in course of time.
Add ghee then and there while stirring the stuff.
Do the stirring in medium flame.
Grease a plate with ghee and keep aside.
In 15 to 20 minutes add all the ghee and when you find the stuff thickens becomes thick like roti dough it is the right time to transfer it to the plate. Add the broken nuts, cardamom powder,  mix and transfer the stuff to the plate and make the surface even.
Allow it to set down for 5 to 10 minutes.
With a knife cut them to pieces.

    1. you can use condensed milk in place of khoya but reduce the sugar quantitty
