Cucumber with Coconut Milk kootu / Vellirikkai Thengai paal Kootu

Ingredients for making Cucumber with Coconut Milk kootu :


Cucumber (larger ones) 4 (peeled and diced into small cubes)
Moongh dal 3 tb spoons
Thur dal 3 tb spoons
Slitted green chillies 4
Thick coconut milk 200 ml
Coconut oil 2 tea spoons
Mustard seeds, urad dal, curry leavess, cumin seeds and 2 red chillies for seasoning.

How to make Cucumber with Coconut Milk kootu?

Boil the dals with generous amount of water in a broad pan.
When the dals are half cooked add the chopped cucumber pieces, green chillies.















Add required water for boiling.
Put a pinch of turmeric powder.
When the vegetables are boiled well add required salt and mix well.
Finally pour the coconut milk, give a stir and immediately switch off the stove.
















Heat a sautéing pan with coconut oil.
Add the items given for seasoning and wait till they splutter.
Pour them on the kootu.
The cucumber is ready to serve now.
