Long back my mother in law used to make Peanut rice often and we love it. My son loves to carry it in lunch box. In due course I completely forgot making that. Few days back I watched the video of Peanut rice posted by the food community, Home Cooking. Immediately I asked the recipe from my MIL , more or less similar to the one I watched and made it next day itself. A comfort lunch box recipe to relish with any vegetable stir fry and chips....

Ingredients for making Peanut Rice (Verkadalai Sadham):
Boiled Rice 3 cups required for 3 persons
Peanuts / Verkadalai 5 table spoons
Red chillies 5
Coriander seeds 1 tea spoon
Sesame Seeds 4 tea spoons
Shredded Coconut 3 table spoons
Urad dal 2 tea spoons
Chana dal 2 tea spoons
Cumin seeds 1/4 tea spoon
Asafoetida powder 1/4 tea spoon
Turmeric powder 1/4 tea spoon
Curry Leaves
Oil 3 tb spoons
How to make Peanut Rice (Verkadalai Sadham)?
Dry roast the peanuts in a pan till it becomes light brown and keep aside.
Dry roast the sesame seeds till they splutter and keep aside.
Heat the pan with 2 tea spoons of oil and add all the dals, coriander seeds, red chillies and cumin seeds and fry till the dals become golden brown.
Now add the coconut too and stir for a while. Allow them to cool down.
From the roasted peanuts take 3 tea spoons of peanuts and keep aside.
Now except peanut add all the ingredients in a blender and powder coarsely.
Finally add the roasted peanuts and just give few turns.
Now the mixture is ready.
Heat a broad pan with remaining oil and do the seasoning with mustard seeds, urad dal, asafoetida powder and curry leaves.
Add the 3 tea spoons of peanut too to it with turmeric powder.
