Ingredients for making Crispy Diamond Chips:
- All purpose Flour 1 and 1/2 cups
- Whole wheat Flour 1 and 1/2cups
- Salt to taste
- Hing / Asafoetida powder 1/2 tea spoon
- Peeled Ginger piece of 2 inches in size
- Washed Curry leaves 2 table spoons
- Green chillies 5 or 6
- Ghee 1 table spoon
- Oil for frying
Method for making Crispy Diamond Chips:
Grind green chillies, ginger and crystal salt with water to paste. Add curry leaves to the paste and just give one turn so that they will become small pieces. Keep it aside.
Add the ghee to the Flours and mix well with fingers. Then add the ground paste and hing powder and mix well.
Now add water little by little and make it a tight dough like Poori or Chapathi dough.
Make small balls out of it and roll to thin chapathis by dusting with wheat or all purpose flour.
With the help of a knife cut them into diamonds and keep them in a plate.
After making diamond cuts from all the dough heat the oil in a pan.
Once it heats well fry them in batches to golden colour and store in dry boxes after they get cooled.
