Vazhaithandu Mor Kootu (Banana stem Kootu)

Banana stem is a fiber rich vegetable that is loaded with amazing health benefits. We make kootu and curry with this vegetable at least twice a month. This Banana stem kootu is made in a different way from other kootu varieties and tastes very good....

Note: The bottom most part of the stem is always hard with tuf fibers. So use the banana stem that is slender and tender.

Ingredients for making Banana stem kootu:

  • Banana stem 2 long pieces
  • Thur dal 2 tb spoons
  • Salt to taste and 3 tea spoons coconut oil for seasoning

To be soaked:
  • Green chillies 2
  • Red chillies 2
  • Cumin seeds 1 tea spoon
  • Coriaander seeds 3 tea spoons
  • Chana dal (Bengal gram ) 2 tea spoons
  • Raw rice 1 tea spoon
Soak the above items in water for 30 minutes. After 30 minutes add the soaked stuff with two table spoons of fresh grated coconut and grind to paste,  mix the ground paste in a cup of thick butter milk and keep aside. (100 ml of blended curd)

Method for making Banana stem kootu:

Remove the polished and shining outer layer of the banana stem.
Make thin rounds out of the stem. While making rounds if any fiber is seen in between the rounds, remove it off with the help of the index finger.

Chop the rounds to small square pieces.
Always put the chopped pieces into a bowl full of water adding 2 tea spoons of butter milk to the water.

It prevents the stem from becoming dull or black.
Heat a pan with 3 cups of water. Add the thur dal. Wash the chopped stem in buttermilk water and add to the pan. Add salt.
Let boil till the chopped stem becomes soft.
Now add the ground paste mixed with the thick butter milk. Mix well. The kootu will be thickened in two minutes. Add chopped curry leaves.
Saute it with mustard seeds and urad dal in 2 tea spoons of coconut oil.
