In a pan dry roast the following and powder them to a coarse powder.
For the paste:
Heat a pan with a tea spoon of oil and saute 5 or 6 baby onions till the colour changes and switch off the stove.
With the roasted onion add the following:
Grind the above things to fine paste with water and keep aside.

Ingredients for making Veg Paya:
- Thinly sliced onions from 2 onions
- Green chillies 2
- Chopped veggies like carrot, beans, cauliflower and potato 1 cup
- Green peas 1 tb spoon (optional)
- Ginger garlic paste 2 tea spoons
- Red chilli powder 1/4 tea spoon
- Salt to taste
- Oil 2 table spoon
- Turmeric powder 1/4 tea spoon

- Dhania / Coriander seeds 3 tea spoons
- Red chillies 3 or 4
- Cloves 4
- Cinnamon sticks few
- Star anise 1
- Mace / Jathipathri 1 piece

- Coconut 2 table spoons
- Roasted gram / pottukadalai 2 tea spoons
- Fennel seeds / Saunf / perun jeeragam 2 tea spoons
- Khus khus / kasa kasa 1 and 1/2 tea spoon
How to make Veg Paya?
- Boil the chopped veggies and keep aside.
- Heat a pan with Oil and saute the onions and green chillies till the onions become soft.
- Add the garlic ginger paste, the powder and saute for a minute.
- Then add the paste, turmeric powder, red chilli powder and required salt and fry till the raw smell goes.
- Add the boiled veggies and 2 cups of water.
- Let them to boil till the gravy consistency reaches.
- Garnish with coriander leaves and serve.
