Ingredients to make Elaneer Payasam / Tender Coconut Kheer:
- Tender coconut water 200 ml
- Tender coconut scooped out 1 cup (from two tender coconuts)
- Full cream milk 1 litre
- Sugar 2 cups (approx 250 gms)
- Roasted nuts of your choice 2 table spoons
How to make Elaneer Payasam / Tender Coconut Kheer?
Boil milk in a heavy bottomed pan till it becomes creamy with layers and very thick like condensed milk.
Add sugar while boiling and mix well.
Switch off the stove.
Once it gets cooled refrigerate it.
Add the scooped coconut pieces to a blender jar and give just two turns.
Let them be with small bite size pieces and pulp.
Mix the pulp with the Tender coconut water and refrigerate.
Before serving mix the sweetened milk and tender coconut stuff together, garnish with roasted nuts and serve chill.
