Ingredients for making Rava Idli:
- Sooji / Rava / Semolina 2 cups
- Thick butter milk 3 cups
- Salt to taste
- Finely chopped green chillies 1/2 teaspoon
- Grated ginger 1/2 teaspoon
- Curry leaves few
- Ghee / Clarified butter 2 or 3 tea spoons
- Mustard seeds 1/4 teaspoon
- Urad dal and Chana dal 1 tea spoon each
- Eno fruit salt or cooking soda 1/4 tea spoon
How to make Rava Idli?
Heat a pan with ghee.
Do the seasoning with mustard and dals.
After they splutter and dals become brown, put in the ginger, green chillies and curry leaves.
Now keep the flame to medium and add the rava and fry for 3 minutes.
Transfer the roasted stuff to a bowl and wait till they become cool.
Pour the buttermilk to the bowla and mix, bring the Rava idli batter to dosa batter consistency.

If needed add some water.
Keep aside for 30 minutes.
Grease the idli plates and keep ready.
Add eno or cooking soda to the Rava Idli batter, give fast stir and fill in the idli plates.
Steam for 15 minutes.
Now the Rava idli is ready to serve hot with coconut chutney.
