Kathamba Sambar (Mixed Vegetable Sambar)

Kathamba Sambar is a tasty and delicious Sambar with the flavour of many vegetables. It is made using freshly ground spices. This type of Sambar is usually made when we have more guests at home during any festive season or in marriages. Since Sambar itself has more vegetables, either Potato chips or Pappads are enough as side dish....

Ingredients for making Kathamba Sambar:

 

 

 

 

 

 

 

 

 

 

Tamarind juice extracted from a lemon size tamarind 3 cups

Mixed vegetables cut into cubes (Like Drumstick, Capsicum, Brinjal, Broad beans, Carrot, Ash gourd, Yellow Pumpkin) 

Green chillies 2 

Boiled Thur dal 1 cup

 

 

For Kuzhambu Paste:

 

 

 

Fry in a kadai in 3 tea spoons of oil the following to golden brown:

Coriander seeds 3 tb spoons

Thur dal  3 tea spoons

Chana dal 4 tea spoons

Pepper 1/4 tea spoon

Red chillies 5 or 6

With the above fried ingredients 1 tb spoon of fresh coconut and grind to coarse paste with water and keep aside.

 

 

 

 

 

Method of making Kathamba Sambar:

Boil the vegetables in Tamarind water with salt and turmeric powder. Add the slitted green chillies. When the vegetables become soft, add the boiled Thur dal and the ground paste with enough water and mix well. Let them boil for 3 to 5 minutes. Add fresh curry leaves. Saute the Sambar with mustard seeds, half teaspoon fenugreek, a red chilli  and hing powder in sesame oil.
