Egg Plants/ Brinjals 7 or 8Thinly sliced onions 2 Capsicum pieces cut into squares from 1 cqpsicum Fresh Tomato puree taken from 3 tomatoes Finely chopped ginger and garlic 1 tea spoon each Garam masala powder 1/4 tea spoon Cumin seed powder 1/2 tea spoon Red chilli powder 1 1/2 tea spoon Coriander seed powder 2 tea spoons Cumin seeds 1 tea spoon Oil 3 tb spoonsButter 2 tb spoonsSalt to tasteKasuri methi leaves 2 tea spoons
How to make Baingan Masala?
Wash the brinjals, remove the stems and cut them to thin long pieces.
Heat pan with 3 tb spoons of oil and shallow fry the brinjals to golden brown in medium flame. Take them out and keep aside. Add the butter to the oil leftover in the pan and heat the pan. Add the cumin seeds and wait till they splutter.
Fry the ginger garlic pieces to brown and fry the onions too till become brown. Then fry the capsicums for a minute.
Now add all the powders mentioned with required salt and stir well. Pour the puree into it and fry till the oil separates.
Now finally add the fried brinjals and methi leaves and stir gently. The yummy side dish is ready to serve. This tastes delicious to have even with plain steaming hot boiled rice.
