Spicy, Easy and Non Sticky Lady's Finger Fry


This healthy vegetable is the favourite one for most of us and kids too love to have this when made tasty and non sticky. Try this recipe to make Lady's finger with fresh spices in its original colour. A wonderful vegetable stir fry to have as side dish with rice and rotis...

Ingredients for making Spicy, Easy and Non Sticky Lady's Finger Fry


Fresh and Tender Lady's fingers  1/4 kg
Oil 2 tb spoons
Curd 1 tb spoon
Turmeric powder 1/4 tea spoon
Mustard seeds,urad dal and curry leaves for seasoning
Salt to taste


For Spice powder:


Coriander seeds 2 tea spoons
Cumin seeds 1/2 tea spoon
Red chillies 5 or 6
Roasted peanuts 2 tea spoons
Garlic heads 2



Heat a pan and fry coriander seeds and red chillies till nice aroma comes, Switch off the stove and add the cumin seeds, garlic and ground nut and stir for few seconds.
Allow the stuff to cool down.
Powder them very coarsely by giving few turns in a mixie and keep aside.




How to make Spicy, Easy and Non Sticky Lady's Finger Fry?


Wash the veggies and wipe them to dry with a kitchen towel without any moisture.

Cut them to small pieces of half centimetre thickness.
Heat a pan with oil.

Once the oil is heated add mustard seeds, urad dal and curry leaaves. After they splutter and the dal becomes brown add the turmeric powder and salt to the oil and give a stir.

Now add the chopped veggies and stir. Add the curd and stir. Keep the flame to medium now.

Once you add the curd it seems like becoming mushy. But in few minutes the chopped veggies become separated with one another.

Let the vegetable to fry in medium flame and give gentle stirs occasionally.

Don't cover the pan at any stage.

Once you feel the lady's finger are cooked and the frying is enough add the powdered stuff and mix well.

Let it get fried with the spices for few more minutes.
Switch off the stove.
