Vegetable Stew


 


This Kerala style spicy vegetarian side dish serves a great combo for Aappam, Idiyappam and Sevai..

 



 
Ingredients:



 

 

 

 

 

 

 

 

 

 

Mixed veggies (carrot,beans ,peas, cauliflower and potatoes) 1 cup

 


Onion cut into long thin strips - 1

 

Green chillies (slit) - 3 to 4

 

Ginger garlic paste - 1 tbspn

 

Thick coconut milk- 1 cup

 

Cinnamon sticks 1 inch piece

 

 



Method:



Heat oil in a kadai and add cinnamon stick.Add onion and saute for 2 mins. Now add slit green chillies and ginger garlic paste. Saute till raw smell goes. Add all veggies salt and little water. Cover and cook till veggies are done and the water evaporates. Add coconut milk and after a boil switch off. Don't allow to boil for more than two minutes.


Serve hot with Aapam, Sevai or Idiyappam.
