A very common sweet accompaniment with Lunch or Dinner in South India is Vermicelli kheer. It is very easy to make and very delicious with the taste of Milk and Nuts....
Ingredients for making Vermicelli Kheer:
Vermicelli 1 cup
Whole fat milk 1 litre
Sugar 3 cups
Roasted Cashews and Almonds as required
Ghee 2 tea spoon
Method for making Vermicelli Kheer:
Heat a heavy bottomed pan with 2 teaspoons of ghee. Roast the vermicelli to golden colour. Then add 500 ml of milk and keep the flame in medium. Let the vermicelli to cook for 15 minutes. Then and there add some milk when the quantity in the pan decreases. Add the rest of the milk also and finally add the sugar. Don't allow the milk to boil for long time after adding the sugar. Once it dissolves take out the pan from the stove. The more the time the milk boils, the more the taste it gives . Add the nuts and serve either hot or cold.
