Easy to make Mullu Thenkuzhal

A popular and common snack liked by all is this crispy mullu murukku. There are so many versions of making this popular snack and here is the simplest one with available ingredients at home, no need for processed rice flour and  no compromise in taste...

Ingredients for making Mullu Murukku:

  • Rice flour  4 cups
  • Roasted dal powder 1 amd  1/2  cups (Pottukadalai)
  • Ghee or Butter 2 tb spoons
  • Salt to taste
  • White sesame seeds or cumin seeds 3 tb spoons
  • Red chilli powder 1 tea spoon
  • Asafoetida / hing powder 1/4 teaspoon
  • Oil for deep frying

Method for making Mullumurukku:

Store bought rice flour can be used for this. Dry roast the rice flour till it becomes hot in a pan. (Readymade Idiyappam flour could also be used and that need not be roasted)
Powder the roasted dal (Pottukadalai)  in a mixie and sieve it out.
Add the roasted dal powder with the rice flour and mix well.
Now add all the above mentioned ingredients except oil and mix well with hand.
Add water little by little and knead to a smooth dough to the consistancy of roti or chapathi dough without any lumps.
Use the disc with star shaped holes in the press and put some dough into it.
Once the oil is heated squeeze the dough into the oil and fry till it becomes golden colour on both the sides.
When you squeeze the murukku into the oil, the flame must be high and then it should be cooked in medium flame.
